 1. Living Pig Collection Unit
When living pigs arrive at the slaughtering plant, they are unloaded onto the holding pen platform. A veterinarian inspects
each pig for compliance with epidemic prevention standards before moving healthy pigs to the holding pen, which measures
1.5 to 2.4 square meters per pig. Pigs stop feeding 24 hours before slaughter and refrain from drinking 3 hours prior. They
are cleaned as they enter the slaughterhouse, with controlled water pressure for effective cleaning. The entrance channel for
the pigs should be 900-1000 mm wide.


2. Living Pig Stunning and Bleeding Unit
After cleaning, pigs are stunned with electricity for convenient killing and bleeding. This essential step ensures pigs are numb,
facilitating humane processing. There are two bleeding methods:

  • Vertical Bleeding: Pigs are hung by their hind legs on bleeding shackles, with necks cut for blood drainage, taking approximately 5 minutes.
  • Horizontal Bleeding: Pigs slide onto a horizontal conveyor for killing, with 90% of blood drained in about 3 minutes.
After bleeding, pigs are suspended on overhead convey rails for further processing.

3. Pig Carcass Processing Unit
Scalding Methods:
  • River Type Scalding: Carcasses are immersed in hot water for 4-6 minutes, with workers reversing them for even scalding.
  • Hanging Type Scalding: Carcasses are directly conveyed to a hot water pool while suspended, preventing heat loss.
  • Steam Channel Scalding: Carcasses are placed in a steam channel for scalding, minimizing cross-contamination.
Dehairing Methods:
  • Horizontal Dehairing: Scalded carcasses are placed in a dehairing machine.
  • Spiral Dehairing: Carcasses from the steam channel slide into a spiral dehairing machine.
After dehairing, carcasses are unloaded on a pre-skinning conveyor, and hooves are removed. The processing steps
include burning residual hair, cleaning the surface, eviscerating, and splitting the carcass for further processing.


4. Pig By-Product (Offal Processing Unit)
Red viscera are transported to inspection systems for further processing. Upon passing inspection, they are cleaned and
moved away from the slaughtering area to avoid odors and contamination. White viscera undergo similar procedures,
ensuring cleanliness and safe handling.


5. Pig Carcass Deboning and Packaging Unit
Deboning Methods:
  • Hanging Type Deboning: Half carcasses are hung for pre-deboning before moving to a conveyor.
  • Horizontal Type Deboning: Half carcasses are unloaded onto a conveyor for deboning without pre-deboning.

Pork is vacuum-packaged and transported to freezing rooms for instant freezing, followed by transfer to a constant
freezing room for long-term storage.
